Morning Glory Bread

Ingredients:

  • 3 large eggs
  • 1/3 cup pure maple syrup

  • 2 teaspoons orange zest
  • 1-1/2 cups almond flour
  • 1/2 cup tapioca flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon sea salt
  • 1-1/2 cups grated carrot
  • 1/2 cup grated apple about 1/2 an apple
  • 1/3 cup raw walnuts chopped
  • 2/3 cup unsweetened shredded coconut plus more for garnish

Directions:

  1. Preheat the oven to 375 ° F.
