Morning Glory Bread

Yield: 1 loaf of bread
Ingredients:
- 3 large eggs
- 1/3 cup pure maple syrup
- 1/4 cup olive oil
- 1 tablespoon fresh lemon juice
- 2 teaspoons orange zest
- 1-1/2 cups almond flour
- 1/2 cup tapioca flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon sea salt
- 1-1/2 cups grated carrot
- 1/2 cup grated apple about 1/2 an apple
- 1/3 cup raw walnuts chopped
- 2/3 cup unsweetened shredded coconut plus more for garnish
Directions:
- Preheat the oven to 375 ° F.
- Oil loaf pan.
- Add the first 11 ingredients (eggs through salt) to a blender and blend until smooth.
